Tiramisu using Bunbury Biscuits (egg free)

Ingredients

  • 8 to 12 small Bunbury biscuits
  • aquafaba as the egg replacement (6 Tbsp for 2 eggs and whipped with the sugar same as normal egg)
  • 75g Caster
  • Sugar
  • 250g Mascarpone Cheese
  • 200g cold Espresso coffee
  • Dark chocolate for grating

Method

  1. Make Bunbury biscuits as per packet instructions and ingredients
  2. Whisk eggs and sugar for 6 minutes until creamy.
  3. Add mascarpone and beat 2-3 minutes until thick and creamy.
  4. Soak biscuits in cold espresso (with Brandy if using)
  5. Make a layer of cheese mix, then a layer of soaked biscuits and continue until serving dish is full ensuring to finish with a later of cheese mix.
  6. Grate dark chocolate over the top and refrigerate overnight. Best results are when made the day before.
