Mabel’s chocolate muffins
Ingredients
- 450g Mabel’s Mix
- 2 eggs – lightly beaten
- ½ cup oil (vegetable, canola etc – do not use Olive oil)
- ½ cup of water
- 2 tablespoons chocolate chips or chocolate chunks
- 4 tablespoons of white chocolate chips or chunks
Method
- Preheat oven to 175°c
- Grease muffin trays with a little oil or butter
- Combine ingredients in a bowl and mix with a silicon spatula until well combined and smooth
- Add 2 tablespoons of milk chocolate bits and 4 tablespoons of white chocolate bits and mix just enough to evenly combine
- Fill the muffin forms level to the top (this is so you get the “muffin top” spilling over)
- Bake 15 minutes and then drop the temp back to 160 if fan forced
- Test with a skewer around the 25-minute mark (you want the skewer to come out not quite clean (a little sticky is good))
- Cool slightly in the muffin pan before turning onto a wire rack.
