Mabel’s chocolate muffins


  • 450g Mabel’s Mix
  • 2 eggs – lightly beaten
  • ½ cup oil (vegetable, canola etc – do not use Olive oil)
  • ½ cup of water
  • 2 tablespoons chocolate chips or chocolate chunks
  • 4 tablespoons of white chocolate chips or chunks


  1. Preheat oven to 175°c
  2. Grease muffin trays with a little oil or butter
  3. Combine ingredients in a bowl and mix with a silicon spatula until well combined and smooth
  4. Add 2 tablespoons of milk chocolate bits and 4 tablespoons of white chocolate bits and mix just enough to evenly combine
  5. Fill the muffin forms level to the top (this is so you get the “muffin top” spilling over)
  6. Bake 15 minutes and then drop the temp back to 160 if fan forced
  7. Test with a skewer around the 25-minute mark (you want the skewer to come out not quite clean (a little sticky is good))
  8. Cool slightly in the muffin pan before turning onto a wire rack.
