Cinnamon Tea Cake
Ingredients
- 330grams Self Raising Flour
- 130 grams softened butter
- 220 grams castor sugar
- 2 large or 3 small eggs
- 2 tsp vanilla extract
- 160grams milk
Cinnamon topping
- 20grams melted butter
- ½ teaspoon cinnamon
- 3 teaspoon castor sugar
Method
- Preheat oven to 180°c
- Grease 20cm square pan and line the bottom with baking paper
- Cream butter and sugar until light and fluffy
- Add egg and vanilla – mix until combined
- Add flour, vanilla and milk – mix until combined and creamy (the mixture will be quite thick)
- Pour batter into the prepared pan and smooth the surface
- Bake for 40-50 minutes or until the cake is cooked
- Remove from oven once cooked
- Melt the topping butter and mix the cinnamon and sugar
- Brush the top of the cake with the melted butter and sprinkle over cinnamon mixture
- Let the cake sit in the tin for at least 10 minutes before carefully transferring to a wire rack to cool completely.
