Cinnamon Tea Cake


  • 330grams Self Raising Flour
  • 130 grams softened butter
  • 220 grams castor sugar
  • 2 large or 3 small eggs
  • 2 tsp vanilla extract
  • 160grams milk

Cinnamon topping

  • 20grams melted butter
  • ½ teaspoon cinnamon
  • 3 teaspoon castor sugar


  1. Preheat oven to 180°c
  2. Grease 20cm square pan and line the bottom with baking paper
  3. Cream butter and sugar until light and fluffy
  4. Add egg and vanilla – mix until combined
  5. Add flour, vanilla and milk – mix until combined and creamy (the mixture will be quite thick)
  6. Pour batter into the prepared pan and smooth the surface
  7. Bake for 40-50 minutes or until the cake is cooked
  8. Remove from oven once cooked
  9. Melt the topping butter and mix the cinnamon and sugar
  10. Brush the top of the cake with the melted butter and sprinkle over cinnamon mixture
  11. Let the cake sit in the tin for at least 10 minutes before carefully transferring to a wire rack to cool completely.
